Upon arrival, they were gently pressed in our bladder press where we gently extract juice from the berries. Afterwards, the freshly squeezed juice is sent to tank for a few days to let most of the sediment settle to the bottom of the tank. We then rack the clean juice to neutral French oak barrels to begin their native fermentations. The grapes were harvested during the cooler night-time and early morning temperatures, preserving the inherent aromas and flavors. All of the fruit was whole cluster pressed and the juice was settled overnight before racking off lees.
