2018 | Chardonnay (Arroyo Seco) | Monterey | California 

Harvested from different blocks across Mission Ranch Vineyard between 9/28-10/16, the grapes all arrived at Folktale and were treated the same. Upon arrival, they were gently pressed in our bladder press where we gently extract juice from the berries. Afterwards, the freshly squeezed juice is sent to tank for a few days to let most of the sediment settle to the bottom of the tank. We then rack the clean juice to neutral French oak barrels to begin their native fermentations. The individual lots all completed their primary and secondary (malolactic) fermentations, aged in French oak, and blended just prior to bottling in May, 2018.
