1oz $10 - 2oz $14Shortly after we began barreling what would become BCD Straight Bourbon we decided to barrel a second bourbon using our original bourbon recipe but replacing the dark rye in the mash bill with whole wheat. By no means an original idea but we're glad we tried it and we think you'll be glad we did as well. BCD Wheated Bourbon is fermented and distilled with the same care as our Straight Bourbon but is then matured in 30 gallon American white oak barrels. Once hatched our Wheated Bourbon holds a dark mahogany color, and the aromas of vanilla, oak and caramel. On the palate it is slightly sweet with flavors of caramel and fruit followed with a smooth bourbon finish.

It is distilled from a mash of at least 80 percent corn and aged for four years in a once-used Bourbon barrel. While the "Sour Mash" moniker originated from the whiskey production process of the same name – whereby some previously fermented mash is used as the starter for the new mash to be fermented, much like making sourdough bread – Michter's Original Sour Mash earned distinction for its unique taste. With its unique grain selection, it cannot be categorized as a rye or a bourbon. 1oz $10 - 2oz $14Deerhammer set out to distill a uniquely Colorado rye whiskey in the Fall of 2016. We have thieved samples over the years, with batches varying in maturation from 2-4 years. Ultimately we landed on a selection of some of the most extraordinary barrels for our Pot Still Rye debut bottling. Ongoing, we will marry together our absolute favorite barrels into a singular annual small batch release.

This 2020 Deerhammer Pot Still Rye features a grain-bill comprised of 70% Colorado rye (San Luis Valley), 20% oats, 10% roasted barley. It is 4 day open fermented and double pot distilled on our custom built 'squat-head' copper pot stills. Maturation occurs at 8,000ft in heavy toast, #2 char new oak barrels.

After World War 2, Americans turned to clear spirits, and Old Overholt soon found itself as the only nationally distributed straight rye whiskey on the market. Despite being the only rye on the market, it struggled, and in 1987 was sold to James B. Beam Distilling Company. After the sale, production was moved to Kentucky. Beam Suntory markets Old Overholt as one of the "The Olds" along with Old Grand-Dad.

He knew he wanted a mashbill of 100% rye to capture a full-flavored spice. He just needed to land on the ideal age statement and bottling strength to realize his dream. It didn't take long for him to arrive at perfection: a rye aged not less than six years, carrying a strength of precisely 96.56 proof. A sturdy thread of cinnamon and citrus binds it all together. The Port of Greenore is located within just a few miles from Cooley Distillery in Co. Louth. The grain used to make this grain whiskey was shipped into Greenore Port and this is where the name originated from. This batch was bottled in 2007. Before long, patrons and publicans alike were clamoring for more of "Paddy's whiskey," so the name was changed to honor the man himself. Paddy's namesake whiskey, triple distilled and aged in the oaken casks of County Cork, Ireland, was always light, balanced and pure. A smooth, accessible whiskey for nearly a quarter millennium. And it remains just so today, whenever friends join together around the award-winning whiskey that bears Paddy's name.
